Detailed Description for Vinegar of Banyuls 16.9 oz

The fine Banyuls Vinegar is from Cave de l'Abbe Rous, southernmost point of France where the Pyrenees plunge into the Mediterranean. It has a uniquely richly and complex palate, the underlying "rancio" (fresh walnut) flavour highlighted by honey, vanilla and liquorice notes. This vinegar is made by exposing 650-litre barrels of top-quality Banyuls fortified wine to the sun for four years.
After acetification, the vinegar is aged for 12 months in oak casks, when its acidity and complex flavour blend to produce a highly distinctive, mellow tasting vinegar. Banyuls Vinegar can be used in all kinds of ways – to pep up seasonings, make delicious marinades, or to add character to sauces and gravies.
