Detailed Description for Pecorino Romano 10 oz Italian Cheese

Pecorino Romano, Sheep's milk hard cheese, 10 oz/285 gr.
The cheese is of very ancient origin, with many historical references to it in the Roman period; it spread over the centuries to the Latium region although the main source of milk continued to be Sardinia.
Pecorino is an excellent grating cheese, and also works well as an ingredient because it doesn't melt into strings when it's cooked. In its milder renditions it's also a nice addition to a cheese platter or with fruit, especially pears, while a chunk with a piece of crusty bread and a glass of red wine is a fine snack.
Pecorino is an excellent source of calcium, and indeed Roman wet nurses were traditionally given Pecorino to enhance their milk. It's also a good source of phosphorous, potassium, and magnesium, and a good source of protein -- a chunk of Romano is about 25% protein. It's also 31% fat, and though this is significant, people on diets often use it to flavor their foods because a little goes a long way.
A year old, it is served on a cheese board with with fruit, nuts or a dressing of olive oil. Four years old, it is grated or shaved and used for pasta, risottos and pesto sauce. It's best bought in a piece and grated as required.
The most important property of Pecorino cheese is its strong flavor and most applications include the cheese for this reason. Given its strong flavor, only a limited amount of cheese is required to give the product the desired cheese flavor. This makes Pecorino cheese particularly suitable for calorie reduced applications.
Wine choices may vary from dry but rich reds, such as Cabernet Sauvignon, Syrah/Shiraz, Merlot, Zinfandel, Nebbiolo, Valtellina Sfursat, Amarone della Valpolicella, Montefalco Sagrantino or Primitivo di Manduria, to dry fortified wines, such as Marsala Vergine or Vernaccia di Oristano, to sweet wines such as Recioto di Soave, Vin Santo, Aleatico or Picolit.
