For food ripening, keep the cheese
at maximum 8 C for the first 30 days. When it is ripe, wrap in greaseproof paper
and keep in the centre of the fridge at 4 C. Best at the end of the meal accompainied
by a red wine.
An excellent snack served with fresh bread.
